Pitmaster Thursdays Recipe: Pizza

For our very first PITMASTER THURSDAYS event, Mark Grieco, pitmaster of the championship BBQ team Four Men and A Pig, demonstrated how to cook pizza on a Big Green Egg.

Read on for his homemade dough recipe and cooking techniques to recreate his perfectly grilled pies at home.

Pitmaster Thursdays Pizza Recipe Adding Cheese

Ingredients:

  • 1 ¾ cups hot water at 110 degrees F
  • 1 tsp white sugar
  • 4 tsp yeast
  • 4 cups flour
  • 2 tsp kosher salt
  • 1 tbsp. olive oil
  • Your favorite sauces, cheeses and toppings

Instructions:

Combine water, sugar and yeast.

Mix well and let stand until it starts to foam.

Combine flour, salt and olive oil and add the water mixture in a stand mixer with a dough hook.

Mix on low for 7 minutes.

Pitmaster Thursdays Pizza Recipe On the Big Green EggCut mixture in half and form a ball. Cover in plastic wrap and let rise in the refrigerator for 8 hours.

Pull off pieces of the dough and roll out to your preferred pizza size.

Top with sauce, cheese and your favorite toppings. Bonus points for adding barbecue meat.

Cook pizzas at 600 degrees F for about 8 minutes per pie, checking occasionally.
