From Louisiana, Andy Roo's Cajun Blackening Seasoning is a salt free mixture of garlic, onion, paprika, cayenne pepper, white pepper, black pepper, oregano and other spices that's fantastic on steaks, chicken, fish, shrimp and vegetables. Prepare meat of your choice by liberally covering with blackened seasoning. Rub spices into meat thoroughly. Using a heavy bottom skillet, preferably a cast iron skillet, place on stove at high heat . Add meat and watch closely as meat is seared. Cook on high heat for 2 minutes then turn and cook for 2 more minutes.
