From there, you'll work through trimming, injection, and seasoning step by step — on your own Certified Angus Beef USDA Prime brisket that you bring home at the end of class to cook yourself. You're not watching someone else's brisket. You're building the skills on your own cut.
The class also covers cooking timelines, smoke behavior, fire management, wrapping decisions, and the tenderness markers that tell you when a brisket is actually done.
