For our very first PITMASTER THURSDAYS event, Mark Grieco, pitmaster of the championship BBQ team Four Men and A Pig, demonstrated how to cook pizza on a Big Green Egg.
Read on for his homemade dough recipe and cooking techniques to recreate his perfectly grilled pies at home.

Best Pizza Dough Recipe
- 1 ¾ cups hot water at 110 degrees F
- 1 tsp white sugar
- 4 tsp yeast
- 4 cups flour
- 2 tsp kosher salt
- 1 tbsp. olive oil
- Your favorite sauces, cheeses and toppings
Instructions:Combine water, sugar and yeast.
Mix well and let stand until it starts to foam.
Combine flour, salt and olive oil and add the water mixture in a stand mixer with a dough hook.
Mix on low for 7 minutes.
Cut mixture in half and form a ball. Cover in plastic wrap and let rise in the refrigerator for 8 hours.
Pull off pieces of the dough and roll out to your preferred pizza size.
Top with sauce, cheese and your favorite toppings. Bonus points for adding barbecue meat.
Cooking Directions:Place pizza directly on the Big Green Egg Pizza Baking Stone.
Cook pizzas at 600 degrees F for about 8 minutes per pie, checking occasionally.
