INSTRUCTIONS: The following ratios are our recommendations to add to your injecting and brining processes to maximize your meat's natural moisture retention, freshness, and overall improvement of tenderness: For Injecting: We recommend 1 Tablespoon of Phosphates for every 16oz of liquid. For Brine: We recommend a 1/2 cup of Phosphates for every 32oz. of liquid.
